Fresh Tomato Salsa Shrimp over Carrot and Summer Squash Noodles

Fresh Tomato Salsa dinner recipe

12 oz. cooked shrimp
2 medium tomatoes, chopped
1 medium red onion, chopped
1/4 cup finely chopped fresh cilantro
1/4 cup lime juice
1TBSP + 1tsp olive oil
Sea salt
Pepper
2 medium spiralized squash
2 medium spiralized carrots

Combine shrimp, tomatoes, red onion, cilantro, lime juice, 1 TBSP oil, salt and pepper in a bowl and mix well. Refrigerate covered for 20 minutes.
Heat 1tsp oil in a pan and add squash and carrots, salt and pepper. Stir frequently for 3-5 minutes or until vegetables are cooked to desired doneness.
Put vegetables in a large bowl and top with shrimp mixture.
Serve immediately!

Containers: 2 1/2 green, 1/1/2 red, 2 tsp
