Ingredients
• 1 cup shredded carrots
• 1/4 cup oats
• 2 eggs
• 3/4 tsp baking powder
• 1 tsp cinnamon
• 1/8 tsp nutmeg
• 1/2 tsp vanilla
Instructions
1. Preheat oven to 350 degrees.
2. Grease 1 mini loaf pan
3. Combine everything in a blender and blend until smooth
4. Pour into loaf pan and bake for 20-25 minutes.
5. Add 1 tsp of peanut butter to top of mini carrot loaves right before eating.
